I know that sounds weird. But basically last month we got a slow cooker, and one of the things I wanted to make was beef stew. Very simple, just beef, carrots and potatoes. I looked at a bunch of healthy recipes online, but there were so many ingredients and I was like..."Maybe I don't need these recipes?"
I've done it before with my homemade chicken noodle soup, too, and now I have my own recipe for that. So we got some beef broth, and I just added some fennel, rosemary, black pepper, fresh garlic, and fresh mint, and it went in the slow cooker for seven hours, and it worked! Still healthy, still tasty, but it didn't take twenty different ingredients to get there.
I am unreasonably proud of myself now.
